Apparently it's a tradition. Everyone who eats there, they sign a bill and staples it to the ceiling or the wall. Tons of famous people have signed bills and they are framed throughout the restaurant as well. Pretty awesome food. I had the 16oz peppercorn ny strip. Delicious!
