KAC Cookbook
Ok ladies and Gentlemen we seem to have alot of talent for making tasty treats on this forum.Get out your favorite recipe that grandma would make and post it up.I am always looking for new ideas to shake up supper time and am looking forward to seeing what you folks share.You never know,some of these recipes may end up at a KAC event

Im gonna start this off with a very simple recipe from a very special lady, My grandma Ferguson she would make this all the time because it was cheap and easy.Back in the day when your making a treat for a ton of kids this seemed to be the best idea.Sometimes it would turn out but most of the time she had at least 5 babies crawling up her legs and hangin onto her duster so she was slightly rushed and distracted. lol!! When this happened you would just grab a spoon and dig in. Hahaha!
Grandmas PeanutButter Fudge
2 cups sugar
.5cup of milk
.5cup butter
1 cup peanutbutter
bring sugar,butter,milk to a boil over med heat stir for 4 min then add peanutbutter.Pour mixture into a shallow pan and enjoy

this is the meatloaf recipe I use. The family loves it and I have friends request it if I mention making meatloaf.
Ingredients
Stuffing:
2 large or 5 small corn muffins (2 to 3 cups), crumbled by hand
1/2 pound bacon, chopped
1 red bell pepper, diced
1 tablespoon seeded and minced jalapeno
2 tablespoons minced garlic
2 tablespoons chopped fresh flat-leaf parsley
Salt and pepper
1 egg, beaten
Meatloaf:
3 tablespoons olive oil, plus 3 tablespoons
1 cup diced red onion
1 tablespoon seeded and minced jalapeno
2 tablespoons minced garlic
2 pounds ground beef
1 pound ground pork
2 teaspoons sea salt
2 teaspoons freshly cracked black pepper
2 tablespoons chopped parsley leaves
1 tablespoon chopped thyme leaves
1 teaspoon dry mustard
1/4 cup ketchup
1 tablespoon Worcestershire sauce
2 eggs
6 ounces sliced Cheddar
Directions
For the stuffing: Preheat oven to 275 to 300 degrees F.
Spread the cornbread crumbs on a sheet pan and let toast for about 20 minutes, or until lightly toasted and dry. Turn oven up to 350 degrees F.
In a skillet brown the bacon until crispy. Drain. To the same skillet add the red pepper, jalapeno, and garlic and cook until soft.
In a bowl, combine the cornbread crumbs, bacon, and vegetable mixture. Add parsley and salt and pepper, to taste. Add the egg and mix thoroughly.
For the meatloaf: In medium skillet over medium heat add oil, red onions, jalapeno and garlic. Cook until caramelized, remove from heat and let cool.
In a bowl combine the meat, salt, pepper, parsley, thyme, mustard, ketchup Worcestershire, and eggs and thoroughly mix.
Divide the meat mixture in half. Shape 1 half into a rectangle, creating a canoe, and then loosely fill with stuffing. Do not pack it in. Use the other half of the meat to fully enclose the stuffing. Transfer to the oven and bake for 1 1/2 hours, or until internal temperature reaches 145 degrees F. Layer the cheese slices on top and bake for another 5 minutes to melt the cheese. Remove from oven and let rest for about 10 minutes. Cut into thick slices and serve.

Quick Kid Quesadillas...
I learned this one living in TX when a "real Mexican" showed me how they warmed tortillas. Great if you have kids and a constant war with cleaning and clutter.
Ingredients...
flour tortillas
cheese slices
an electric stovetop
Set the stove eye to nearly medium or a little less than half way around the dial, let it warm up.
put the cheese slices between two tortillas, break the slices up and orient them between the two tortillas enough to cover the tortillas to within an inch of the edge.
Lay the tortilla directly on the stove eye.
Flip it a few times. Toy with it a bit and you'll get it right. Cheese melts, tortillas get crisp on the outside. The circular stove eye pattern browns into the tortillas. Slice them with a pizza slicer.
Kids over them. You can add other stuff if you want but if get carried away all the stuff slides out. A small bowl of salsa to dip into goes well with them.
Quick, easy, not dishes if you feed the kids on paper towels.
Also, if you can just warm your tort's this way to go with beans or anything else.

2 blocks of mild Mexican velvetta, 1.5 lbs cooked ground beef, 2 cans of diced tomatoes and green chilis, a table spoon or 2 of worschtashire ( I have no idea how that's spelled), and add chili powder to taste. Cook in the crock pot for a few hours stirring on occasion.
Get you some tostitos and enjoy!
Makes a lot so depending on how much you want you may want to cut that in half, but the full recipe works good for parties and tailgates.

My kids tear them up and they're really easy. No mess is always good. If you're feeling rich those velveeta cheese slices melt really well but the ultra cheap stuff doesn't seem to bother the kids.Lady Luck wrote:KyGlassman I LOVE your recipe lol! especially the no dishes part.
It just takes a wee bit of practice getting the heat just right on your particular stove. I try to watch my cholesterol so I eat beans frequently. A bowl of beans with some stove eye tortillas rolled up is pretty tasty. I don't mess with making a burrito or anything, just get them a bit crispy and roll them up by themselves to compliment some beans.

O' Charley's Loaded Potato Soup
1/2 cup butter
1/2 cup flour
2 quarts water
1 1/4 pounds fresh new potatoes, skin on
2 teaspoons chicken base
2-3 teaspoons jalapeño juice
1 1/2 teaspoons Tabasco
2 10 3/4 ounce cans cheddar cheese soup
3/4 teaspoon white pepper
3/4 teaspoon garlic powder
Shredded cheddar cheese, bacon bits and chives for garnish.
In a large kettle, melt butter. Add flour and cook 3 to 4 minutes. Slowly add water. Simmer 20 minutes, stirring frequently (will burn if not watched closely).
Scrub potatoes and cut into 1/4 inch cubes. Place in a pan with water to cover and bring to a boil. Cook 10 minutes, drain. Add to water mixture along with chicken base, jalapeño juice, tabasco, cheddar cheese soup, pepper and garlic powder. Simmer 20 minutes
For garnish, top each serving with 1 tablespoon shredded cheese, 1 teaspoon bacon bits and 1 teaspoon chives.
Makes 8 to 10 servings.

1lb bacon
1 package Lil' Smokies
Brown sugar
Toothpicks
Cut the bacon into thirds.
Wrap 1/3 strip of bacon around each lil' smokey and secure with a toothpick.
Toss/coat the wrapped smokies in brown sugar
Place evenly on cooking sheets (I use the disposable aluminum ones cause it gets messy)
Bake at 350 degrees for about a 30 minutes. May take a little longer, but 30 is usually the minimum.
I am not allowed to come to some parties anymore unless I make at least a double batch to bring with me...lol

Here is my chili recipe. It was adapted from a mix called "2 alarm chili" I used to find at Kroger's.
Cutting grass is the price I gladly pay for not being cold.

Don't remember, probably is though. I used it for years then it got hard to find. So the next time I found it, I measured all the packets of ingredients and wrote down the recipe. I usually make 6 qts. at a time, using Brooks hot-n-spicy chili beans. Alrighty here:
Angel Food Cake
1.5 cups of egg whites (usually 12-14 eggs)
1 cup flour
1.5 cups sugar
1 teas cream of tarter
1 teas vanilla
1 teas lemon juice
1/2 teas salt
1 tabl water
Combine the egg whites, cream of tarter, water, lemon juice, and vanilla in a large mixing bowl. You will need a whisk attachment. Set speed to med and let it go for about 5 minutes, the egg whites will become foamy in this time. Once they almost double and are pretty foamy looking start SLOWLY adding 3/4 cup of sugar. Should take you 3-4 minutes to add all the sugar with the beaters still on medium. The egg whites will become 3 to 4 times the starting size and will be starkly white. Like Styrofoam in a way. Shut off the mixer and remove the whisk attachment, the egg whites should peak and then fold over once you remove the attachment. If they don't keep beating. If they stand straight up you beat for too long but its still possible to make the cake, it just won't be as awesome.
Now combine the flour, remaining sugar, and salt. Sift. You will sprinkle 1/4 of the mixture over the egg whites and fold the mixture into the egg whites. Continue with each 1/4 until all is folded nicely in.
Oven at 350F. Need an ungreased Angel Food cake pan. Plop the mixture into the pan and lift the pan up and give it a thunk on the counter. Then into the oven for 35 minutes.
Once its done remove pan and invert it over a glass. Let cool completely. Cut out of pan and enjoy.
