She went out with the girls tonight so I had to figure my own dinner out. Went to Franks and they had a little 2 lb Tri-Tip. Guy offered to chop it and sell me half. Baby tri-tip for dinner. YUM

Meatloaf for tonight, and one for later in the week. Sweet corn and mashed potatoes. Soul food, truly.

WOW. That's what mine looks like clean and new. You will love it man. One suggestion is leveling the legs. Best way to do it is with the grill cold and a squirt bottle of water. Adjust those legs so the water nicely flows out the rear center.

Johnsonville Italian sausages that I cooked, sliced & then sautéed with sweet peppers & onions. Added pasta sauce. Tonight it’s on hoagie buns with shredded Italian cheese. Leftovers will be over pasta.

Checked out The Farmers Wife this morning, or at least the shop on a farm with that name. The Short Ribs were $5.50/lb, the Chuck is $8.00/lb, and the Gourmet Ground Beef(a brisket/short rib blend) was $7.80. It's all grass raised, grain finished local beef. When you consider the cost of shipping and what places like SRF charges, I I have high hopes for this place. Only 17 mins from my house in Okolona.

I go there frequently. They sometimes have ground beef 10 1lb packs for $48 and occasionally give me a free package. Beef is all I’ve bought from them though.

Pretty much all of our meat products come from Trackside Butcher in Campbellsburg. The wife still hasn't acclimatize to our chemical experiment food...

I made chicken etouffe with rice from a box of Tony Chachere’s mix. It wasn’t as good as I had hoped.

Recipes are all similar. There are 2 types red (tomato base) and brown (beef based)
INGREDIENTS: some are better than others. Last onions I got from Kroger were tasteless. Farmers markets have fresh.
SPICES: thyme, bay leaf, garlic, cumin, oregano, basil, paprika, salt & pepper and cayenne. The "all in one" mixes are WAY too salty for me.
MAKE YOUR OWN STOCK: it's just boiling chicken carcasses. Cover with water and keep submerged till bones fall apart and strain.
MEATS: anything you like and plenty of it. Conecuh cajun sausage is the best I've found around here (Value Market). Dark meat chicken only. Seafood only at end of cooking not to over cook.

MAKE A ROUX: you can do a traditional flour, butter & oil and babysit stir. I toast my flour at 400° in the oven till brown (about an hour-ish), stir every ½ hour till tan then every 5 minutes till desired brown. Use butter/oil and mix cooking for 5 minutes. EASIEST ROUX EVER!

I give my first shot at wings on the Kamado a B to B+. I cooked them perfect, but went too heavy on the dry rub. Image

I just did Smoking Dads BBQ version and they were amazing! Dry rub and then brushed with a apple cider thinned BBQ sauce put on at the end. Very lite sauce.
