I made some burnt ends a few weeks ago and got them way too sweet! Couldn't eat more than 2 or 3 tops before you'd get worried about sugar shock! LOL
I'm not much on sweet stuff anyway, so next time I'll have to back off the brown sugar a good bit.

Basically this. His videos are awesome.
For the BBQ on the burnt ends I used some cheap BBQ sauce and added enough apple cider vinegar to make it not so thick and pasty. I added maybe a teaspoon of brown sugar to maybe 8oz or so of that BBQ. Also just eyeballed too. I used Siracha as a binder on that one. Sometimes I do mustard. Neither change the flavor much.

My first brisket. Taste awesome, moisture is good, super tender. Texture just isn't quite right though. Not sure what problem was. It falls apart if you try to pick a slice up.

That's my guess... 8.5 hours at 270° and a 1.5 hour rest in foil in a cooler. Probed between 203 and 211 when it finally felt soft and I took it off to rest. At 195-200+ it was still pretty firm feeling when I probed it for the temp.

After having it reheated today I definitely am going with the over cooked scenario. Today it was like a med-well steak. Great flavor, but definitely way over cooked. I think I'll freeze it and use it for chili...haha

Sometimes it's that particular cut of meat. I had one brisket that I know hit all the marks perfect - bland and dry.

I never thought about it before, but them burnt ends I did a while back started out real tender and juicy, just way too sweet, but after like 3 days they got real tough and got to were we couldn't handle it anymore.
I gotta keep that in mind if I try it again.

New recipes the last two nights.
Blackened honey glazed salmon bites and buffalo shrimp lettuce wraps. The glaze on the salmon was a bit much, but the shrimp was amazing.

Threw about 4lbs of beef short ribs in the crockpot before work today. Super tender and should make for a great lunch tomorrow. I don’t use sauces and stuff. Just cherry wood smoked salt and a cup of beef bone broth.
