Low and slow NooB

This isn't that low or slow, but compared to the grilling I've been doing it is. My first go with my new to me Kamado (all of you that passed on this deal/steal, THANK YOU! Image), and it's pork ribs. 1st pic is at 30ish minutes, 2nd pic is at 1.5 hours with being opened once to spray them. How badass is this thing?!?! ImageImage

My corral is full. 2 weber kettles and a silver b gas grill. I would have loved to take it home.

I think I'll do a smaller gas griddle for a quick burger or brat or whatever and this and I'll be good for a while. But then again, who knows?! This whole new world may suck me in also...Image

2.5 hours... And with half the coal I'd have used in 15-30min grilling on my old grill. Freaking bad ASS!!!Image

I'm usually very critical of myself and not one to pat myself on the back at all BUT, holy crap for my first ribs ever, I knocked them out of the park!!! PERFECT!!! Tons of flavor but nothing overwhelming anything else. Perfect texture! Firm enough to pick up and take a bite without falling apart, but very very tender too. Wife said the best ribs she's ever had and after living in Singapore for 6-7 years she's VERY critical of food...haha

2nd outing was fantastic also! 2 whole chickens spatchcocked (kind of), and then I went ahead and halved them because of my shitty 1st attempt at it...Image Even the breast were jucy, the thighs were perfection. I'll probably just do thigh quarters doing chicken from now on. Just the right amount of seasoning. I'd still probably take the ribs 9 out of 10 times over this. The wife was more impressed with these than I was. She said if I sauce them at the end (like I did the ribs) next time she thinks they would be perfect.

What's the best value for your money on cooking knives? I've got a few cheap ones that have been sharpened well and they just weren't up to the task of spatchcocking this chicken. Image

Best bang for the buck in kitchen knives is Victorinox Fibrox. Can get them on Amazon. I'd recommend not getting a set as you always get shit you don't need or watch. I'd start with a chef's blade, Boning Knife, and a Granton edge slicer. Those are the 3 knives I use 99% of the time. I also have a nice high end set of Lamsons but I use my victorinox. Virtually every grilling group on line will tell you Dalstrong knives are all the rage. It's because they look badass to appeal to mens ego. Victorinox knives are epic awesome blades, and fibrox handes are the easiest no maintenance, cleaning friendly option.

Pork loin I cut into 1/2 chops. Seasoned with kinder brown sugar bbq rub. Smoked @ 220 for about 1 1/2 hrs. Sauced them & turned the temp up to 350 to thicken the sauce. Delicious & tender.

Yah, Henkel's are good stuff. Back in the day they made high end knives for 5 star Chef's. 35 years ago their Chefs Blades were several hundred bucks. They went to retail a number of years ago and have always maintained a solid level of quality.
