I am working my ass off this weekend to get this test coded so I asked the wife to cook. Gave her a pound of ground Brisket/Short Rib to work with. Smothered Beef Burgers on Arugula with roasted root vegetables. She can cook! Was freakin' awesome!

I do Smoked Scotch Eggs on my UDS. Boil the eggs about 7 1/2--8 min. Just enough to peel without them breaking apart. Wrap inside sausage of your choice. Just make sure to pinch the edges of the sausage together so it doesn't come apart when cooking. Season with your dry seasoning of choice, and th...

Cheap salmon on the KJ Jr. Dry brined with smoked sea salt then put a light glaze of honey with a dust of Meat Church Texas Sugar. Cooked at about 250.
